Scent Guru teams up with one of world's best chefs

Jordi Roca of the famed Roca Brothers, Jimmy Boyd and Rosa Esteva have taken the concept of "hotel scent' to a whole new creative level to formulate a sensory journey of scent and taste.

One of Barcelona's most iconic pioneers of the gastro and hotel scene -including the cult hotel, Omm, the cultural custodian Rosa Esteva is no stranger to pushing the boundaries, so when it came to create a 'scent' is was less about adding to the ambience, it was about how to capture the very essence of her concept.  Hotel Omm with its Michelin starred dining Roca Moo is an icon, the birthplace of the design hotel in the city: it is stylisly cool, sultry and naturally a creative hub - where else can you dine on some of the world's best cuisine to the tones of a live DJ? The scent of the Hotel Omm would need to be beyond normal.

Rosa picked international perfumer Jimmy Boyd with the task of jointly creating a scent for the Omm - Bergamot, fruits, musk, vanilla, headline the 'taste' notes of Omm Musk.

“When Rosa Esteva asked me to create a perfume that represented Hotel Omm, I studied how I could define its most important characteristics” Boyd explains. 

“In the end, I chose the essence of bergamot to express the balance between peace and dynamism, the scent of fruits to capture the breakthrough and innovative concept of the hotel and the musk and vanilla aromas to convey the sensuality of its gastronomic offer”, he adds, referring to the Michelin-starred Roca Moo and Roca Bar restaurants, both of which are the brainchild of the unmistakable Roca brothers, voted twice as the best chefs of the world.

The next stage of scensory development was how do you turn the perfume Omm Musk into a pudding? (And one you would want to eat, too?)  Jordi Roca did his thing.

Roca is no stranger in creating a number of high-profile scent inspired desserts under his belt - Trésor by Lancôme, Polo by Ralph Lauren, Eternity by Calvin Klein, Carolina by Carolina Herrera, Extrème by Bulgari - Jordi Roca decided to do the same with Hotel Omm’s signature scent, and Roca Moo’s dessert, Omm Musk Perfume was born. 

Prepared by Jordi Roca and Roca Moo pâtissier, Paolo Temesio, Omm Musk Perfume consists of a central ball made of red plum ice cream with jasmine essence, wrapped with a tangerine mousse with pink meringues and vanilla crunches. “It is a fresh dessert, but warm at the same time” as Temesio defines it “due to the contrast between the mousse and the ice cream, as well as the diverse touches of vanilla and flowers...” he adds emphasizing the scent of roses, a subtle tribute to Rosa Esteva. 

Beyond being gastronomically advanced and so elementally balanced, “the most complicated thing was to achieve a fun and original set up that was an all in one”. The final result? A spherical presentation that picks up all of the nuances of the dessert so that they explode in unison when tasting it.

 

This much-loved, innovative dessert is “as sweet as the perfume itself” and, in having neither lactose nor gluten, is suitable for anyone, no matter how full they are. Furthermore, as Temesio explains, “in a menu of so many dishes and very different flavours, Omm Musk Perfume is perfect to combine with everything tasted so far, and to prepare the diners for the second dessert”.
